2 medium-large sized celery roots
1 red bell pepper diced
2 bunches green onions/scallions chopped
2 tsp sesame seed oil
1TBS Coconut oil
1 TBS miso paste
1TBS onion powder
salt to taste
-Wash and peel celery root and chop into smaller 1 to 2 inch pieces
-Place celery root pieces in food processor and process until you get a rice-like texture. This should take anywhere from 2-5minutes in your food processor.
-Put you celery rice in a large mixing bowl and add to it the chopped bell pepper, scallions, oils, miso, and salt.
-mix everything well and serve up as you would actual rice. You can use celery rice as a pilaf, a substitute for fried rice, or whatever you feel your imagination can cook up...or in this case not cook!
*note* this recipe taste even better the next day as the flavors have a chance to meld together.
